holidailies

I joined a new challenge called Holidailies... to blog every day from December 1st until January 1st.

There are several prompts on the Home page for Holidailies but I am veering off that path today to talk about holiday cooking: my favorite recipes.

I don't know why I only make this stuff at the holidays but I do. Oh, my fat ass just reminded me why. ;-)


Never-fail fudge:

1 can sweetened condensed milk (I ALWAYS use Borden)
12 oz chocolate chips
dash salt
splash vanilla

Cook in microwaveable bowl on high for 45 seconds and stir until smooth. Spread in an 8x8 inch pan, lined with wax paper or parchment paper. Refrigerate until firm. Remove from pan, remove paper, cut into bite size squares. Store covered in fridge. May be frozen. Experiment with other flavor combinations. Adding mint or peanut-butter chips to the regular chips both have been quite popular.



Peanut Clusters

1 can Spanish or salted peanuts (about 15 oz)
6 oz chocolate chips
11 or 12 oz butterscotch chips

Melt chips in microwaveable bowl. Stir in nuts. Drop by spoonfuls onto waxed paper. After hardening, store in refrigerator.


The Peanut Clusters get me every time.
