Chicken Del Jardin
Ingredients:
2 tsp Mrs. Dash Extra Spicy Seasoning Blend
1 lb boneless, skinless chicken breast halves, pounded to 1/4 inch thickness
2 cups zucchini, halved and sliced 1/4 inch thick
8 oz. can no-salt added corn
2/3 cup mild picante sauce
Spray 10 inch nonstick skillet with cooking spray. Cook chicken over medium-high heat 2-3 minutes. Turn and sprinkle each breast with 1/2 tsp Mrs. Dash. Cook 2-3 minutes longer until cooked through. Remove chicken and keep warm. Add remaining ingredients to skillet and simmer 5 minutes or until zucchini is tender. Serve chicken topped with vegetables and sauce. Serves 4. 3 points per serving.

Cook time 8 to 10 minutes
