christmas eve, eve

Today was such a special day at school. I feel very appreciated and loved by students and friends alike. Some of the kids were given the task of writing about teachers who've had an impact on their education and several students shared with me some things I've done to engage them in their learning. Some kids sought me out to wish me happy holidays.

I really feel the love right now.

And I'm getting ready for Dad's annual Christmas Sing-along. I actually made food for it and I can smell it now... yum.

Cuppa-cuppa-cuppa dip
1 cup chopped onions
1 cup cheddar cheese
1 cup Hellman's mayonnaise (brand specific, folks)

Stir together and bake at 350 for about 20 minutes, until the top is golden and it's slightly bubbly. Oy. Great with Ritz crackers.

Buffalo chicken dip from my neighbor, Nicole
2 bricks cream cheese, softened
2 cups shredded chicken breast
2 cups shredded cheddar
1 cup Texas Pete's Buffalo Hot Sauce
1 cup Ranch Dressing

Mix the chicken into the softened cream cheese and add all the rest, stir well. Bake around 40 minutes or so. Or put in a crock pot and heat through to melt the cheeses. Great with Tostitos Scoops. I actually made it with a half-cup of Texas Pete's to accommodate the older crowd.
